Why, oh why is it that I always seem to make WAAAYYY more oatmeal than I need? Don't tell me to use the instant packets - I can't stand the stuff. Does anyone else have this problem?
I always make more than I need. But if you put it in a tupperware and stick it in the fridge, just scoop out the amount you need the next morning, warm it up in the microwave and voila! instant oatmeal!
I often make a big pot for the week and then I only have to wash one pan:)
Or cook it in the microwave! Just do twice as much water (I actually use a little less than that because I like it more "clumpy") and microwave it for 2 to 2 1/2 minutes.
Funny, I didn't think oatmeal would keep well in the fridge. But why not? I should give it a try. I think when it is packaged up like that, it reminds me of Ramona Quimby's school experiment growing fruit flies. Yuck. We actually have some in a tupperware from the last time I made it. Dave was saving the left overs and I was making fun of him for doing it. "Who wants to eat leftover oatmeal?" Well, I'll give it a try. I like the idea of making breakfast only once a week. Microwave from the start is a good idea too, if I'm just doing one portion - and as long as it tastes as good.
We always have the opposite problem. We think the boys will eat less of it, and suddenly it's gone, and Louie and I have to have "second dinner" later.
